New Manager and Bartender Bring Fresh Inspiration to Rebar’s Culinary and Cocktail Program

CHICAGO – January 8, 2016 – As the temperatures in Chicago drop, Rebar is heating things up with the debut of new seasonal dishes and cocktails, a new manager hailing from the world of fine dining and an adventurous, skilled bartender who has designed some of Chicago’s top mixology programs.


Seasonal Dishes and Libations
While paying homage to seasonal ingredients, the culinary and beverage teams at Trump International Hotel & Tower® Chicago have created a tantalizing array of shareable new dishes and an innovative cocktail lineup especially for Rebar. With seasonal flavors incorporated into both the food and beverage menus, the new offerings bring renewed spirit and options to those seeking a luxurious night out while enjoying expansive views of the Chicago River, Lake Michigan and Chicago’s famed architecture.

New Dishes Include:

  • Shrimp Cocktail-Gulf Shrimp, Creole Cocktail Sauce ($25)
  • Hamachi Crudo-Avocado Puree, Yuzu, White Soy, and Flavor Pearls ($22)
  • Beet Carpaccio-Thinly Sliced Beets topped with an Arugula Salad ($18)
  • Harvest Salad-Mesculn Greens, Cucumbers, Grape Tomatoes, Apples, Roasted Onion, Goat Cheese, Toasted Pecans with Sherry Maple Vinaigrette ($20)
  • Crab Cake Sliders-Arugula and Siracha Aioli ($28)
  • Bruschetta-White Bean Spread, Sautéed Mushrooms and Tomatoes, Parmesan Cheese ($18)

  • Porte des Morts- Bulleit Bourbon, Pimms, Carpano Antiqua, Deaths Door Wondermint ($17)

Noteworthy Staff

Trump International Hotel & Tower Chicago is pleased to announce two key appointments to the Rebar team. A beacon of warm hospitality, creativity and harboring a keen appreciation for all things food and wine, Kristina Mandac embraces her new role as Rebar Manager. Additionally, Joshua Williams joins the lounge to helm the cocktail, craft beer and highly regarded wine program, bringing a breadth of experience from many top restaurants known for their strong mixology programs.

  • Kristina Mandac, Manager

Kristina Mandac brings a wealth of cocktail and culinary know-how from her three years of experience serving as a private events manager and also a senior restaurant manager for the Michelin-starred, Spiaggia, and also Café Spiaggia. Previously, she worked at the Sofitel Chicago Water Tower in management roles, where she honed her wine, cocktail and culinary expertise. With Croatian roots, Kristina spent many of her formative years living in Croatia and speaks the language fluently. While working in Dubrovnik, Kristina garnered her first taste of the hospitality industry working for a renowned restaurant and hotel. She holds a Bachelor of Science degree from the American College of Management and Hospitality in Dubrovnik and volunteers her time teaching the Croatian language to young children. The service philosophy that Kristina lives by is, “Surprise guests with creativity while exceeding their individual needs and expectations.”

  • Joshua Williams, Bartender

Originally hailing from South Dakota, Joshua has journeyed far from his early childhood days living on an expansive alfalfa and dairy ranch. His parents gave him freedom to explore, and this strong sense of adventure translates into his inventive cocktails. Since moving to Chicago, Joshua has earned his stripes at critically acclaimed restaurants such as Sola and mk. He quickly became head bartender at the famed Girl & The Goat and created their cocktail menu, as well as a menu of barrel-aged concoctions. Subsequently, he was hired as head bartender at Rockit Bar & Grill to design a beverage program for the reopening of the legendary Chicago landmark. At Rebar, Joshua is thrilled that guests enjoy a cocktail list featuring the freshest ingredients, a concise craft beer list with a focus on local breweries and a thoughtful wine program. Outside of work, Joshua is an avid vintage motorcycle enthusiast and also trains for particularly intense marathons such as the one on Pike’s Peak.
